Forever food has been a part of gathering with friends and family and just because you want to be healthy and trim doesn’t mean you can’t enjoy some tasty treats. I found this recipe in a healthy book and thought this would be the perfect time of year to give it a try. Hope you enjoy it too. Just remember to a reasonable portion!
1 pound low-fat cottage cheese: 1/2 cup plain low-fat yogurt: 3/4 cup pumpkin puree; 1/4 cup flour; 3 eggs; 1 teaspoon vanilla extract; 1/4 cup maple syrup; 1/2 teaspoon pumpkin pie spice 1-8 inch prepared graham cracker crust (use real food ingredients) Makes 10 to 12 servings
Preheat oven to 325
Place cottage cheese, yogurt, pumpkin, flour, eggs, vanilla, maple syrup, and spice into a food processor while the motor is running (through the feed tube) Process until smooth (only add a little at a time), then pour the mixture into the crust, using a rubber spatula to spread evenly.
Place the pie in the middle of the oven and bake for about 50 minutes. Let cool before serving. Store in refrigerator.
